He is preparing about a bar in Roppongi.
Cocktails with tea is an interesting area, advised Tomotaka Tajimi, a veteran of restaurant management.
He has even established the “Japan Tea Wari Association” to research the compatibility of Japanese tea and alcohol. And we were immediately allowed to sample several cocktails.
(1) Stem tea of the Sae Midori variety from Sayama x Jin (6)
(2) Oolong white tea (oolong tea with a low degree of fermentation) from Sayama, Japan x Takara Shochu JAPAN
(3) Stick hojicha from Shibushi city, Kagoshima prefecture x Chita
They were all delicious, but (1) impressed me with a flavor I have never tasted in the past. Thank you so much, Tajimi!🍵
I would like to adopt any of them. Enjoy the opening, everyone. Can we open just before the end of the year!
